get coco-nutty

Trish shared a recipe with me a few weeks ago and I've been waiting for a lazy day to try it. At one their favorite cafes in Queen Creek are the most delectable coconut cupcakes. Dense and moist and covered in a coconut cream cheese frosting. She found a killer recipe that nearly mimics their favorite cakes. I'm planning on making these for Easter and dying the coconut for the tops, but I had to try them first. Here in North Carolina the locals go cray-cray for coconut cake and being a sucker for coconut myself I think I've finally landed in coconut heaven.
*I did add about 3/4 teaspoon of coconut extract to my batter for added coconut flavor.
